We have a tendency in this country to attribute high health disparities to personal choice. As a chef, I must remind you of the complex drivers that range from the mechanization of the food system, institutional racism and food deserts. Let us never forget the stigmatization of poverty. My job is to use empathy as a  transformational tool to impact the unjust food relationships our youth currently have.
